Project Halcyon Distillery is a speakeasy-style bar found in the basement of Old Granada Studios. Taking over the former Bonded Warehouse, the space is a hub of innovative cocktails and unique tipples, with an emphasis on independent labels behind the bar. Cocktails follow the seasons, with quirky mixes such as Dixon Martini (Portobello Road Gin, Navy Strength Gin, Chazallettes Extra Dry Vermouth, house winter root pickle, green apple and vermouth air).
Alongside cool sips, the bar also implements a 'store and pour' concept, allowing guests to buy their own bottle of spirit and access it when they return. The industrial den also lets you in on their secrets over a series of regular masterclasses and tastings.
